Who is Chop?
A sandwich shop in Port Melbourne, chopping cheese since 2024.
Since 2024 | Port Melbourne
A sandwich shop, not a chain.
Chop started with a simple frustration: nowhere in Port Melbourne was serving the kind of sandwich we actually wanted to eat. The chopped cheese out of a Harlem bodega. The Italian cold cut from a proper Jersey deli. A gem poutine, because why not.
So we opened a small shop on Rouse Street, bought a chopping board, and started hand-chopping beef and cheese for every order. No warming trays. No pre-made subs. No shortcuts.
What came out the other side turned out to be the sandwich a lot of people had been quietly waiting for.

What we stand for
Three rules we chop by.
Chop by hanD
Every sandwich is hand-chopped on the board, not pre-assembled, not machine-cut. Takes longer. Tastes better. There’s no version of us where that changes.

Melbourne first.
Beef from Peter Bouchier down the road. Cheese from Riverine Dairy. Bread baked that morning at Noisette. If it can come from Melbourne, it does.
Serve it hot.
Everything made to order, the second you ask for it. No warming trays, no reheats. If you order a chopped cheese, the beef hits the plancha when you walk in.

How a Chop sandwich happens
From bag to bun.
Every order follows the same four steps. The whole thing takes about six minutes from the moment we start.
Pick
You choose your base: chopped cheese, Italian cold cut, or one of the week’s specials. Add gem poutine if you are wise.
Chop
Beef minced on the board for the chopped cheese, or cold cuts stacked and sliced for the Italian. Cheese melted straight in.
Dress
Chop sauce, iceberg, pickles, red onion. Hero roll from Noisette, split, toasted on the plancha.
Serve
Wrapped in paper, handed over hot. Napkins included because you will need them. Eat it standing up, that is part of it.
